They don't. The experiments are scheduled months and even years before the flight, and astronauts follow more or less a detailed roadmap and timetable of which experiments to perform and how to do them. All of these details are determined by the scientific Principle Investigator in proposing the experiment. This schedule gets modified by input from astronauts and NASA flight consultants to make certain that in-flight astronauts can actually execute the steps as required.
