You could pick one of the more prominent constellations and plot the positions of the stars on graph paper. Then get the 'proper motions' of each of the stars and predict where the stars would be 10,000 to 100,000 years from now. The stars in the sky move very slowly over the course of a year, but over thousands of years there will be significant changes in what the constellations look like. Your science fair project could be to investigate this effect for several popular constellations.
