Why is it that by NOT adding the cosmological constant, Einstein would have been the father of the expanding universe and not the contracting universe?

Because the universe is observed to be expanding, not contracting. Both solutions are possible in general relativity, but only one is consistent with Hubble's observations and later refinements on them.
